Decadent Scrima’s Pizza of Waukesha

Updated 11/9/2020–The pizza game is strong in Waukesha. Whether you like thick or thin crust, traditional or crazy toppings, there is a pizza place for you. Sure Waukesha has the national chains, but when you have so many great pizza places, why go there?

I first learned of Scrima’s Pizza when Woodman’s opened in Waukesha. They have an area past the produce section and off the meat department where they make pizzas–take-and-bake and by the slice. They also have rotisserie chickens but that’s another post.

The second time I saw Scrima’s was at the Waukesha Farmers’ Market with its wood-fired chiminea stove that they cook pizza in. There is always a long line so I knew it had to be good pizza.

I finally tried Scrima’s this summer when my neighbor’s employer had the pizza truck come for a lunchtime food truck event. I joined her at the event with my step-daughter and son. Though Cameron was too young for his own slice, he enjoyed nibbles off mine.

Knowing the pizza was hot and fresh, I swayed from my normal and tried the breakfast pizza. If you are trying something new, I say go big! It had breakfast sausage, eggs, white sauce, and cheese on their new Pinsa crust. The crust is made with flour from Rome, which is a combination of rice, wheat, soy, and sourdough flours. “A modern twist on an ancient recipe,” according to Scrima’s sales flyer.

I am so glad that stepped out of my comfort zone and I tried this, but I failed to capture any photos. I will soon be attempting my own breakfast pizza on Sundays With Sarah. It was really, really good. The white sauce paired well with the breakfast sausage and the eggs were a great addition. And the crust….light and crispy on the edge, slightly doughy in the middle–how I like it. My step-daughter tried the regular pepperoni pizza and liked it, too. I gave the Scrima’s crew two thumbs up as we left that day.

Earlier this month I was at Woodman’s picking up some essentials and remembered the pizza. I just happened to go on a day that they offer their one-topping pizzas for $10. And as luck would have it, they just finished making some of the smaller Pinsa ones. I had to indulge and get a few pizzas. I settled on a large pepperoni and two Pinsas – a sausage and a pepperoni.

The hubs handled making them that evening and said the only struggle was getting the large pizza initially in the oven as it was just on parchment paper. We have a pizza stone and forgot to use it this time, but now we know.

All three pizzas cooked up perfectly, and I liked the Pinsas just a little more. That crust just overtakes me with how it cooks up so crisp and airy.

The hubs rated the large sausage pizza an 8 out of 10 and that is a pretty high ranking from such a pizza connoisseur. Wild Tomato in Door County is probably the only one that outranks this currently, and well they aren’t doing drone pizza deliveries yet, so we will have to enjoy that one on vacations only. (UPDATE – They do have frozen varieties at Sendik’s now, but they don’t compare to eating it fresh).

I was also able to snag myself a frozen breakfast pizza from a bunker at Woodman’s. I just happened to walk by at the right time and notice a few left. I don’t have a wood-fired stove and that definitely makes a difference, but this was still soooo good.

If you are at the Waukesha Farmers’ Market or Woodman’s, consider picking up one of these. I promise you won’t be disappointed.
